Happy Independence Day!  Since I know that we all want to get out and have some family fun, I will get right down to business:

This cake! It’s going to be a little time consuming but, it’s totally worth it because it is one of the few red, white and blue cakes where each layer is actually a different flavor, not just food coloring. In fact, there’s no food coloring in this at all!

For the Strawberry cake:

8 1/2 0z.  (approximately 1/2 of a box)  white cake mix *Not Vanilla! White only!

1.5 oz. (approximately 1/2/of a box) strawberry instant jello

5 oz. pureed fresh strawberries

2 eggs, room temperature

1/4 c. vegetable oil

3 tbs. water

Mix all ingredients, and pour into a lightly greased 9″ cake pan.  Bake for 20 minutes or until a wooden pick comes our clean.  Let cool completely.

For the Buttermilk cake:

8 1/2 0z.  (approximately 1/2 of a box)  white cake mix *Not Vanilla! White only!

5 oz. buttermilk, room temperature.

2 eggs, room temperature

1/4 vegetable oil

3 tbs. water

Mix all ingredients, and pour into a lightly greased 9″ cake pan.  Bake for 20 minutes or until a wooden pick comes our clean.  Let cool completely.

For the Berry cake:

8 1/2 0z.  (approximately 1/2 of a box)  white cake mix *Not Vanilla! White only!

1.5  oz (approximately 1/2 of a box) of berry jello * It can be any blue colored jello  – blueberry, very berry, smurf berry – just as long as it is blue.  The flavor of the fruit will take over for the jello.

5 oz. pureed fresh blackberries and blueberries, mixed *I do a 50/50 mix, but, if you prefer one berry over the other, by all means weigh it heavier toward whichever is your favorite.  Just be sure to mix them to provide balance.  

2 eggs, room temperature

1/4 c. vegetable oil

3 tbs. water

Mix all ingredients, and pour into a lightly greased 9″ cake pan.  Bake for 20 minutes or until a wooden pick comes our clean.  Let cool completely.

Lemon Butter Cream

2 c. butter,  softened

3 tsp. grated lemon rind

4 tbs. lemon juice

4 c. sifted powdered sugar

Beat first 3 ingredients at medium speed with an electric mixer until creamy.  Gradually add powdered sugar beating until spreading consistency.

        Which I have so very little of 🙂 I once nuked a ganache in the microwave hoping to melt the chocolate faster and what came out was definitely not ganache hahaha. One of these days! And I’ll show you a photo 😉
